  1. Preheat the oven to 180 oC Place the sweet potatoes, onion, broccoli, cherry tomatoes, minced garlic, rosemary, thyme, olive oil, paprika, lemon juice and seasoning into a large bowl Mix until well combined.
  2. Pour into a casserole dish and roast in the oven for 25 minutes Add in the chicken and chicken stock Return to the oven for 25 minutes.

Stir in the passata, parsley, salt, pepper, Italian herb seasoning and basil, bring the mixture to the boil and reduce heat. Heat oil in a saucepan over high heat and fry chicken until lightly golden. Add onion, celery, carrots and garlic. Move them around the saucepan before adding the wine.
